At night at the property you will hear the frogs calling to each other. This lovely fellow is a Green Tree Frog, which will often live in harmony with human hosts. They will hang around any light source that attracts insects. The presence of frogs in an enviroment can be used as a biological indicator of that environment being healthy due to their sensitivity to chemicals and pollution. Busy Bees
Another trip to the farm, heaps of work done, coffee and tea trees planted, habanero pepper patch established, more pineapples planted, and for those people that missed out on honey at the last market because we were sold out, the good news is the bees have been busy and we have extracted 190kg of new fresh honey which we will have at available at the Marrickville Market in the coming weekends. Plus our first ever pick of finger lime for the season.


Finger Licking Good - Honey Soy Rib & Wing Sauce
For glistening, sweet, sticky ribs or wings the Finger Lime Hill Honey Soy Rib and Wing Sauce will soon become a family favourite (as it is in our home). It can be used as a marinade on meat for stir fries as well but our favourite recipe is below: 1kg of ribs (pork or beef) or chicken wings 1 Jar of Finger Lime Hill Honey Soy Rib & Wing Sauce Place chopped ribs or wings in a pot with water to cover. Cook at a rapid boil for 10 to 15 minutes. Pour off all but 2cm of liquid


Hot Secrets - Sweet Heat Honey Chilli Sauce
The hot secret of our Sweet Heat Honey Chilli Sauce is the fact that we use a range of chillies, including Cayenne, Birds Eyes, Jalapenos, Thai, Habanero, Peri Peri and Purple Prince in season which are fermented for a period of time. Ideally the chilli mash is fermented for six months at a minimum. This allows the flavour and heat to develop but the burning sensation of the chilli to soften.
